If you come across a bear in the woods, it's generally going to be at a distance. Also, they're often noisy, you hear them so you make boise too, so they know you're there.
They leave a trail. When you see signs of a bear you start looking for them.
It's extremely rare to sneak up on a bear.
Polar bears do not see humans as food. Like other bears, they will eat humans if they're starving and they will defend themselves if they feel threatened. They're not going to attack you for food like, say a lion preys on a gazelle. They primarily eat seal and will scavange off marine mammal carcasses.
Other bears are omnivores and they will eat meat, but the bulk of their food comes from plant sources. The bulk of their meat comes from insects and fish.
